I find that being prepared ahead of time is the key to a sane mom, no frustrating early mornings or tears just as the day begins. We prepare in the evenings an hour before bedtime.  I like to include the whole family in picking out and laying out clothes for the next day, competing and checking homework and making sure permission slips are signed, projects and book reports are done on time and preparing  healthy, fun lunches that the kids will enjoy. I involve the kids in lunch preparations starting in the grocery store, where they get to pick their favorite fruits and veggies. I also give them choices between a couple different entrees and snacks. While preparing lunches the night before, I let the kids choose which  cutters to use to make fun shapes in their Nature's Harvest bread, fruits, veggies, lunch meats, cheese etc. Then I let the kids make their own fruit and veggie skewers. I like to educate the kids about having a healthy lifestyle and having them try new healthy foods and ways to prepare them. This makes our picky preschooler and sassy second grader happy because they get to choose, so I know they will eat a good balanced lunch and be ready to conquer the rest of the day! I like to end the evening with teeth brushing and a relaxing warm bubble bath for the kids, then they get tucked into bed and take turns reading a bedtime story.  I find this to be a good way to wind down from our busy day so we all get a good nights rest.  



 Ingredients:


  • Your kids favorite veggies
  • Your kids favorite fruits
  • Cheese sticks
  • Turkey sticks
  • Natures Harvest Bread
  • Deli Sliced Cheese or Vegetarian Substitute
  • Deli Sliced Lunch Meat or Vegetarian Substitute
  • Shape Cutters
  • Small Skewers (I use juice box straws)

Directions:

  • Cut bigger fruits and veggies into bite size pieces.
  • Using a bamboo skewer or small juice box straw, poke a hole in the bite sized fruit or vegetable and stack them until the skewer is full.
  • Repeat until you have as many vegetable skewers, fruit skewers or meat and cheese skewers.
  • Next, pick out the shape cutters you want to use for your Nature's Harvest Bread and center the shape on the slice of bread and push down firmly, separate the scraps and use them to make croutons for your salads.
  • Cut fruits like apples and melon (any fruit with a large enough surface to fit a shape cutter) and center it on the fruit and press down firmly.
  • Repeat this process with lunch meat, cheese slices, etc. I use the scraps to make my sandwich.
  • Assembly your crustless fun shaped sandwiches and put your fun shaped fruits and veggies in a reusable container or bento box.
  • I like to make a lot of these ahead of time and use them for the next few days to save on time.
  • ENJOY!

    1. Thanks James, with little ones, I have learned to be creative and make healthy foods fun, so they make good choices now and later on. Plus it's pretty fun to make!
