Puffy baked pancakes are popular in many cultures.  The batter is almost like any pancake batter but poured all at once into a hot pan and baked instead of making into individual pancakes in a skillet.  

The secret is to make sure the pan is very hot and the butter starts to brown before pouring in the batter; that’s how the wonderful buttery crispy edges are formed.


 All the ingredients prepped and measured to get started making my Finnish Grandmothers Kropsu recipe, just like she did when I was growing up. I love that my family enjoys this simple recipe and I really like to make it for them, just like my Grandma did for me.





 A delicious breakfast of  home made Kropsu using Rodelle Pure Vanilla Extract topped with fresh berries, honey and powdered sugar with sausage, a hashbrown and a hot cuppa.

 This is the egg, sugar and salt whisked by hand, ready to alternate adding milk and flour.

 All ingredients ready to go! I start with placing the cubed butter in a 9X12 pan while the oven is preheating to 400 degrees. When the butter is melted and browned and the oven temp reaches 400 I carefully add the batter to the pan and quickly get it back in the oven to bake for about 30 minutes, I like to keep an eye on it and when the edges start to brown I know it is ready!

 I like to prep and measure out all the ingredients because they are applied quickly and it is important to have everything ready for the best outcome of a fluffy baked pancake.

 The key to a big fluffy Kropsu is to melt the butter in the pan first 

and add the batter to the hot 9X12 pan
